Origin of the Celtic Cowboy
Well,
my story started when I was but a wee boy. After being born in Dundee,
Scotland; my family made the trek to America when I was only 1 year old.
Most of my childhood and early adult life was spent in the Southwest, which is
where I was first exposed to the American Cowboy.
In the late 1990’s, I moved to Dallas, Texas where I met my wife, Lisa. Lisa
and I moved to Austin, which is where I learned how to smoke barbeque.
The first pit that I ever used was a
converted 1940’s water heater that my next door neighbor’s Dad made. After my
first experience of cooking real barbeque, I never looked back. Gas and
charcoal grilling has its place for preparing quick and easy meals, but only
slow smoking can bring out the delicious flavor in certain types of meat.
My chemistry background from school has
helped me when experimenting with different types of salts, spices, peppers
and marinades. I have developed my own homemade rubs, brines and sauces for
all of my barbeque recipes.
Some of these include unique flavors such as my apricot jalapeño glaze for
chicken and pomegranate fig sauce for baby back pork ribs. However, no
Cowboy’s recipe book would be complete without his traditional rub and
barbeque sauce. My barbeque sauce tastes a little sweet and a little hot. I
pride myself in knowing that I start each of my products with the freshest
ingredients, so I know exactly what goes into my Celtic Cowboy cuisine.
Lisa and I moved to Seattle in 2000.
The fire for smoking meat was still in my
heart so I started experimenting with different woods and tastes from the
Northwest.
After several annual barbeque events at our
home, I decided to follow my instincts and the encouragement of my friends and
neighbors to start my catering business. In addition, our annual barbeque has
turned into a charitable event for the local food banks and various other
charities. The chance to share my passion for barbeque and help out others at
the same time was too good to pass up!
