I always believe that true barbeque should have a sauce that brings out
the best flavors of the meat and smoke.
I make my sauces from scratch which starts
with fresh vegetables, herbs and spices.
I also offer a variety of flavors,
including a pomegranate and fig sauce for ribs, an apricot and
jalapeņo glaze for poultry. |

Choosing the right type of wood
is one of the most important aspects of barbequing.
The wood determines what type of smoked
flavor will be created through the cooking process.
Most people that smoke meat typically use
woods that are readily available in their neck of the woods so to speak. For
example, when I lived in Austin, we would use live oak and mesquite. The
mesquite flavor is common in Texas-style barbeques.
Living in Seattle has introduced apple wood
into our smoking process. Apple wood has a tendency to be a little sweeter than
most barbequing woods but is mellow enough to allow other accent woods to be
used in combination.
I typically use hand picked apple
wood, cherry and hickory for pork and poultry and use apple wood with mesquite
for beef.
